Keto Strawberry Cheesecake

Ingredients

For cheesecakes:

1 Tbsp grass-fed butter

¼ cup almond flour

4 oz full-fat cream cheese

1 large egg

1½ Tbsp xylitol

splash of lemon juice


For topping:

1 cup fresh strawberries, chopped

½ Tbsp xylitol, powdered

1 Tbsp lemon juice

Directions:

  1. Preheat oven to 350 degrees / 177 degrees C.

  2. Place butter in saucepan and melt on low heat.

  3. In medium-sized bowl, combine melted butter and almond flour until crumbly.

  4. Divide mixture into three parts and press into bottom of individual cupcake molds to create crust.

  5. Bake crusts for ten minutes or until crispy.

  6. In separate mixing bowl, combine cream cheese, egg, xylitol, and lemon juice until well blended.

  7. Pour cream cheese mixture on top of baked crusts, filling each mold about three-quarters full.

  8. Bake for 15 to 20 minutes or until filling is set and no longer sticks to fork when poked. 

  9. Allow cheesecakes to cool, then place in refrigerator to set overnight. For quicker set time, place in freezer for at least an hour.  

  10. When ready to serve, combine strawberries, xylitol, and lemon juice in saucepan and cook until strawberries have softened and mixture has thickened.

  11. Let strawberry topping cool and spoon over chilled cheesecakes.
