Keto Chunky Turnip Salad

Per serving: 521 calories, 11 g protein, 5 g carbohydrates, 50 g fat

Ingredients

  • 1 lb / 1023 mL turnip, diced
  • 1/3 cup / 89 mL celery, chopped
  • ¼ cup / 59 mL red onion, chopped
  • 2 Tbsp / 13 mL fresh chives, chopped  
  • ½ Tbsp / 8 mL Dijon mustard 
  • 1 cup / 350 mL mayonnaise 
  • ½ Tbsp / 8 mL apple cider vinegar

Directions:

  1. In a pot over medium heat, boil turnip until soft.   

  2. Remove from heat and allow to cool. 

  3. In a bowl, put celery, onion, turnip, chives, mustard, mayonnaise, and apple cider vinegar. Stir until well combined. 

  4. Refrigerate until ready to serve.
