Keto Carrot Cake Fat Bombs Recipe

Ingredients

8 oz cream cheese, softened

¾ cup coconut flour

1 tsp stevia

½ tsp pure vanilla extract

1 tsp cinnamon

¼ tsp ground nutmeg

1 cup carrots, shredded

½ cup pecans, chopped

1 cup unsweetened coconut, shredded

Directions:

  1. Using a rubber spatula, mix cream cheese, coconut flour, stevia, vanilla extract, cinnamon, and nutmeg in a large bowl. 

  2. Fold in grated carrots and chopped pecans.

  3. Roll mixture into 16 balls.

  4. Roll balls in shredded coconut until completely coated.

  5. Serve immediately or store in refrigerator for later.
