Keto Broccoli Cheddar Casserole

Per serving: 177 calories, 10 g protein, 6 g carbohydrates, 15 g fat

Ingredients

  • 1 cup / 120 g cream cheese, cubed and softened
  • ¼ cup / 59 mL sour cream
  • 1 cup / 113 g cheddar cheese, shredded 
  • ½ tsp garlic powder 
  • salt and pepper to taste
  • 1½ lbs / 680 g broccoli, separated into florets
  • olive oil cooking spray
  • 1 cup / 90 g Parmesan cheese, grated

Directions:

  1. Preheat oven to 300 degrees F / 149 degrees C.  

  2. In a bowl, put cream cheese, sour cream, shredded cheddar, garlic powder, and salt and pepper. Fold together to combine.

  3. Add broccoli. Stir until well combined. 

  4. Spray a baking dish with olive oil. Transfer mix to baking dish.

  5. Evenly sprinkle top of mix with Parmesan cheese and bake for 40 minutes or until golden brown. Serve hot.
