Keto Chicken Noodle Soup

Ingredients

For soup:

1 Tbsp safflower oil

1/2 cup celery

1/2 cup carrots

1/2 cup onions

2 to 3 cups organic chicken broth

3 to 6 oz cooked organic chicken

1 tsp salt

Parsley for garnish


For noodles:

2 large eggs

1 oz / 28 g cream cheese

Onion powder and garlic powder to taste


Directions:

  1. In a large pot, heat safflower oil over medium-to-low heat.

  2. Add chopped celery, carrots, and onions to pot and sauté for five to ten minutes, stirring occasionally, until vegetables are softened and release their flavor.

  3. Pour in chicken broth and add cooked chicken.

  4. Season with salt to taste.

  5. Let simmer for 30 minutes.

  6. Add cooled, sliced noodles to soup.

  7. Garnish with parsley before serving.


For noodles:

  1. Preheat oven to 350 degrees F (177 degrees C).

  2. Mix eggs, cream cheese, and spices until smooth in a food processor or blender.

  3. Line an 8x8 inch deep dish with parchment paper to remove noodles easily.

  4. Pour egg mixture onto parchment paper and spread evenly.

  5. Bake for 12 to 15 minutes or until firm.

  6. Let cool before slicing into noodles.
