Total Time: 20 minutes

Serves: 4

Per serving: 389 calories, 31.6 g protein, 10.7 g carbohydrates, 23.4 g fat

Ingredients

1½ Tbsp olive oil

3 carrots, peeled and shredded

¼ head red cabbage, shredded

1 bunch green onions, sliced

2 garlic cloves, minced

1 Tbsp minced ginger

2 Tbsp fish sauce

1½ Tbsp unseasoned rice vinegar

1 Tbsp sugar-free sriracha

1 lb ground pork

sesame seeds for garnish

Directions:

  1. In a large skillet, heat oil over medium heat. Add carrots and red cabbage, and cook for 3 to 4 minutes until tender.

  2. Add green onions, garlic, and ginger and cook for about 1 minute until fragrant. Season mixture with fish sauce, rice vinegar, and sriracha.

  3. Add pork and sauté until fully cooked and no longer pink.

  4. Serve topped with sesame seeds.

Recipe tips:

  • You can substitute ground pork with ground beef. While you can also use ground turkey, it has a lower fat content, which may result in a different flavor profile and texture.

  • To infuse even more Asian-inspired flavors, add toasted sesame oil and sugar-free sweet and sour sauce before adding ground pork.

  • If you prefer a spicier egg roll bowl, add crushed red pepper flakes, hot sauce, or low-carb sweet chili sauce.

  • You can use ground ginger if you don’t have minced ginger.

  • Using red and green cabbage introduces a vibrant color contrast and a mix of flavors.

  • Top your keto egg roll bowl with a fried egg for extra protein and healthy fats.

Ginger, garlic, and green onions

About the ingredients

Packed with shredded cabbage, diced green onions, minced garlic, ginger, and pork, this flavorful dish isn’t only delicious but also a nutritious option perfect for those following Healthy Keto®.

Let’s look at the health benefits of incorporating these ingredients into your diet.

Green onions and garlic

Green onions and garlic belong to the Allium family, which is well known for its antimicrobial properties.

Both garlic and green onions are rich sources of sulfur-containing compounds that can inhibit the growth of various microbes by damaging their cell walls and interfering with energy production.

A study published in Foods investigated the antimicrobial benefits of plants belonging to the Allium genus. The authors summarized, “Allium has shown a significant antibacterial activity against a broad spectrum of antibiotic-resistant Gram-positive and Gram-negative bacteria.”

Ginger

Fresh ginger has long been recognized for its medicinal purposes.

Not only can ginger help relieve nausea and improve digestive processes, but this nutritious root vegetable also has potent anti-inflammatory and antioxidant properties.

Pasture-raised pigs

Pork

Organic and pasture-raised pork offers beneficial fats, including oleic acid, the same health-promoting fatty acid in olive oil.

Research published in Foods found that oleic acid comprises between 29 and 39 percent of the fatty acids in the muscle meat of pork products.

Oleic acid has been linked to metabolic benefits due to its potential to promote balanced cholesterol levels and improve insulin sensitivity.

Cabbage

Red cabbage is a nutritional powerhouse rich in vitamins, minerals, and antioxidants vital for maintaining a wide range of physiological functions.

“Regularly eating cabbage can promote a healthy body weight as it’s low in calories and a significant source of dietary fiber,” explains Dr. Berg. “Fiber helps you feel fuller for longer, which helps prevent overeating and snacking.”

2. Is Egg Roll in a Bowl gluten-free?

This Egg Roll in a Bowl recipe is naturally gluten-free since it doesn't include egg roll wrappers, which are usually made using wheat flour.
