Keto Chocolate-Topped Cookie Dough

Per serving: 85 calories, 1 g protein, 4 g carbohydrates, 8 g fat

Ingredients

  • ½ cup / 113 g butter, melted
  • 1/3 cup / 34 g brown sugar-style monk fruit sweetener 
  • 1 tsp pure vanilla extract
  • 2 cups / 192 g almond flour
  • ½ tsp sea salt
  • ¼ cup / 40 g stevia-sweetened dark chocolate chips

Directions:

  1. Microwave butter for 20 seconds, or until the consistency is soft and slightly melted.

  2. Transfer softened butter to a large bowl and whisk until smooth. Add monk fruit sweetener, vanilla extract, almond flour and sea salt. Stir ingredients until combined.

  3. Cover with plastic wrap and transfer to refrigerator to chill for 20 minutes.

  4. Remove dough from refrigerator and portion into teaspoon-sized balls.

  5. In a microwave-safe dish, heat chocolate chips for 30 seconds to melt. Remove chocolate chips and stir. If not fully melted, microwave an additional 10 seconds and stir, repeating until chocolate is completely melted. Let cool slightly.

  6. Using a spoon, drizzle the dough balls with chocolate. Chill 5 minutes to harden. Enjoy!
