Keto Almond Butter Pine Nut Fat Bombs

Per serving: 211 calories, 3 g protein, 3 g carbohydrates, 21 g fat

Ingredients

  • ½ cup / 120 g natural almond butter
  • 6 oz / 170 g cream cheese, softened
  • 2 Tbsp liquid coconut oil
  • 1/8 cup powdered monk fruit sweetener
  • ½ tsp vanilla extract
  • 1 cup / 140 g raw pine nuts

Directions:

  1. Combine almond butter, cream cheese, coconut oil, monk fruit sweetener and vanilla, mixing to make a dough.

  2. Pour pine nuts into a bowl.

  3. Portion dough into 9 equal balls, about 2 Tbsp each, and drop into the bowl with the nuts.

  4. Roll balls around in the nuts until each one is covered with pine nuts.

  5. Use remaining nuts as a garnish if desired.
