Ingredients

1 cup avocado oil

3 to 6 oz organic tempeh

salt to taste 

2 slices keto-friendly bread (see link in recipe tips)

2 Tbsp organic hummus

3 lettuce leaves

2 tomato slices

3 cucumber slices

3 bell pepper slices

¼ cup sprouts

Directions:

  1. If using a deep fryer, set to 350 degrees F (177 degrees C) and fry tempeh in avocado oil until golden brown.

  2. If not using a deep fryer, heat oil in a small pan before adding tempeh slices.

  3. Cook each side on medium heat for 2 to 3 minutes, then remove from pan and place on a paper towel to soak up excess oil. Salt immediately.

  4. Toast bread slices in oven for 5 to 10 minutes until desired level of crispiness is reached.

  5. Spread hummus onto one side of toasted bread.

  6. Layer lettuce, tomato, cucumber, bell pepper, and sprouts on hummus.

  7. Add tempeh slices, then top with remaining bread slice.

  8. Serve immediately and enjoy your delicious Veggie Hummus Sandwich!
