Ingredients

1 cup shredded coconut

¾ cup almonds, sliced

1 cup almond flour

½ cup coconut flour

1 tsp baking powder

1 tsp cinnamon

½ tsp salt

½ cup butter, softened

½ cup erythritol

1 large egg

½ tsp vanilla extract

¼ cup Lily’s dark chocolate chips

¼ cup unsweetened dried cranberries

Cooking spray

Directions:

  1. Preheat oven to 325 degrees F / 163 degrees C.

  2. Mix coconut, almonds, almond flour, coconut flour, baking powder, cinnamon, and salt in medium bowl.

  3. In large mixing bowl, cream together butter and erythritol. Add egg and vanilla extract, then mix thoroughly.

  4. Slowly blend dry ingredients into butter mixture until smooth.

  5. Fold in chocolate chips and cranberries.

  6. Spray baking sheet with cooking spray.

  7. Use medium-sized cookie scoop or spoon to portion dough into 15 evenly-sized balls.

  8. Place cookie dough balls onto baking sheet, spacing each ball at least one inch apart for even baking.

  9. Bake for 15 to 20 minutes or until edges turn golden brown.

  10. Place cookies on wire rack and let cool for 5 to 10 minutes before serving.

Recipe tips:

  • It’s best to use sliced almonds instead of whole almonds for easier mixing.

  • To achieve a perfectly crispy edge, flatten the cookie dough balls slightly before baking.

  • Coconut oil can be used as a replacement for butter to create dairy-free cookies.

  • Place parchment paper on a baking sheet for easier cleanup.

  • Add a nut butter swirl on top of each cookie before baking for extra flavor and added protein.

  • Use coconut flakes instead of shredded coconut for a more rustic and textured finish.

  • Incorporate oat fiber, which is keto-friendly, to give these cookies a more traditional chewy texture.

Serving and storing tips

Baking a batch of these delightful Keto Oatmeal Cookies is easy and ensures you have a delicious, low-carb treat ready for any occasion.

To preserve the cookies' texture and flavor, store them in an airtight container at room temperature for up to four days. Alternatively, place them in the fridge, where they’ll stay fresh for up to one week.

For extended storage, wrap each cookie individually in plastic before freezing, and they’ll stay delicious for up to three months. You can also freeze the cookie dough and bake it whenever you want fresh homemade goodies.

Simply thaw frozen dough at room temperature before baking, or place a frozen baked cookie in the toaster oven for a few minutes.

Serve Keto Oatmeal Cookies with a cup of green tea or unsweetened coconut milk for a mouthwatering experience that’s both soothing and satisfying.

You can also enjoy these baked delights with No-Churn Ice Cream or a dollop of sugar-free Whipped Cream for an extra indulgent dessert.

Be careful not to consume too many cookies at once, as even low-carb sweets should be enjoyed in moderation to avoid exceeding your daily net carb count, which can interfere with ketosis.

"I generally recommend enjoying one or two low-carb cookies after a meal instead of snacking on them throughout the day," explains Dr. Berg. "Snacking, even on keto-approved foods, is one of the biggest weight-loss mistakes many people make."
